Γιατί το μπρόκολο προστατεύει την καρδιά και τα αγγεία

Οι επιστήμονες γνώριζαν ότι το μπρόκολο κάνει καλό στο καρδιαγγειακό σύστημα, μέχρι σήμερα όμως αγνοούσαν το γιατί. Βρετανοί ερευνητές διαπιστώνουν τώρα ότι μια ουσία του πολύτιμου λαχανικού ενεργοποιεί ένα μηχανισμό που αποτρέπει την απόφραξη των αρτηριών.

Η σουλφοραφάνη, μια ουσία που απαντάται στο μπρόκολο και σε μικρότερο βαθμό στο κουνουπίδι και στα λαχανάκια Βρυξελλών, ενεργοποιεί μια πρωτεΐνη που εμποδίζει το σχηματισμό αθηρωματικής πλάκας, αναφέρει η ερευνητική ομάδα στην επιθεώρηση Arteriosclerosis, Thrombosis and Vascular Biology.

«Γνωρίζουμε ότι τα λαχανικά κάνουν καλό, περιέργως όμως οι μοριακοί μηχανισμοί που εξηγούν γιατί κάνουν καλό παρέμεναν άγνωστοι για πολλά χρόνια» σχολιάζει στο Reuters ο Πολ Εβανς, επικεφαλής της μελέτης στο Imperial College του Λονδίνου.
«Η έρευνα αυτή προσφέρει μια πιθανή εξήγηση για το πώς η κατανάλωση πράσινων λαχανικών προάγει την υγεία της καρδιάς».

Η σουλφοραφάνη, έδειξαν τα πειράματα, «ενεργοποιεί» την πρωτεΐνη Nrf2 , η οποία προστατεύει από το σχηματισμό αθηρωματικής πλάκας. Το πρόβλημα είναι ότι η Nrf2 δεν παράγεται στις διακλαδώσεις και τις καμπύλες των αγγείων, εκεί που η ροή του αίματος επιβραδύνεται και υπάρχει μεγαλύτερος κίνδυνος απόφραξης.

Πάντως η νέα μελέτη πραγματοποιήθηκε με καθαρή σουλφοραφάνη και όχι με λαχανικά, οπότε οι ερευνητές θα πρέπει τώρα να επιβεβαιώσουν τα αποτελέσματα χρησιμοποιώντας πουρέ αληθινού μπρόκολου.
